About Kashmiri Dry Red Chilli
Kashmiri chilli is bought for deep red colour with restrained heat, the combination that gives dishes a rich red tone without the pungency a hotter variety would bring. It is a mainstay of culinary markets and of processors who need visible colour in a finished product.
One point of clarity worth having up front: in the international spice trade, "Kashmiri" generally denotes a type and a quality profile rather than a guarantee of origin in Kashmir itself. Kashmiri-type chilli is now grown across several Indian states, and this is normal trade practice rather than misdescription. If you require chilli of genuine Kashmir origin, say so explicitly at the enquiry stage so it can be sourced and documented accordingly.
Supplied in 25–50 kg export packing, sun-dried and sorted. As with any colour-led variety, specify a minimum ASTA value and maximum moisture in your contract rather than relying on appearance, since surface redness and extractable colour are not the same thing.
