About Byadgi Dry Red Chilli

Byadgi is the variety buyers reach for when colour matters more than heat. It carries one of the highest extractable colour values of any Indian chilli while remaining mild on the palate, which is why it dominates oleoresin extraction and is widely used in dishes and products that need deep red colour without pungency.

The pods are distinctively long and wrinkled rather than smooth, an appearance that surprises buyers expecting a glossy chilli, but it is characteristic of the variety and not a quality defect. Byadgi is grown principally in Karnataka.

Because colour is the reason to buy it, specify a minimum ASTA value in your contract rather than relying on a varietal average. Colour degrades with light, heat and storage time, so a figure agreed at pre-shipment testing is worth more than a published typical range. We can arrange accredited lab testing before shipment.

It is worth understanding what that test actually measures, because it explains disagreements that otherwise look inexplicable. An ASTA value is not read off the pod: a sample is ground, the pigment extracted into solvent and measured against a reference. It therefore describes the extractable colour of the ground product, not the appearance of whole pods in a bag. A lot that photographs beautifully after months in storage can test well below a duller-looking new-crop lot.

The rest of the specification matters as much. State a maximum moisture percentage, since dry chilli held too wet risks mould and aflatoxin over a long sea transit and aflatoxin limits are regulated in most import markets. Add your acceptable broken and damaged percentage, and whether you need stem or stemless, which affects both usable weight and how the material runs on a processing line. Buying for extraction rather than culinary use is worth saying at the enquiry stage, since it changes what we look for.
