About Byadgi Dry Red Chilli
Byadgi is the variety buyers reach for when colour matters more than heat. It carries one of the highest extractable colour values of any Indian chilli while remaining mild on the palate, which is why it dominates oleoresin extraction and is widely used in dishes and products that need deep red colour without pungency.
The pods are distinctively long and wrinkled rather than smooth — an appearance that surprises buyers expecting a glossy chilli, but it is characteristic of the variety and not a quality defect. Byadgi is grown principally in Karnataka.
Because colour is the reason to buy it, specify a minimum ASTA value in your contract rather than relying on a varietal average.
